Baked Kale Gratin

1 ½ bunch Kale

3 tablespoons flour

4 slices bacon

2 ¾ cups Half & Half

3 tablespoons butter

1 ¼ cups grated Parmesan cheese

¼ cup minced shallots

1 ½ cups bread crumbs

1 small red pepper ( finely chopped)

2 tablespoons olive oil

3 garlic cloves, minced

¼ teaspoon red pepper flakes (optional)

 

Preheat oven to 375.  Wash and chop Kale leaves.  Steam in Dutch oven.  (1/2 inch water.  Until tender)  Drain.

Cook bacon in Dutch oven till crisp.  Remove bacon, reserve 1 tablespoon of drippings.  Melt butter with remaining drippings in Dutch oven.  Add shallots, red pepper, garlic, red pepper flakes and saute’ until tender.

Whisk flour in with veggies, whisking constantly 1-2 minutes.  Add Half & Half.   Boil.  Reduce heat to low simmer 2-3 minutes.   Remove from heat and stir in 1 cup of Parmesan cheese.

Spoon mixture into 2 Qt. baking dish.  Stir bread crumbs with Olive oil and ¼ cup cheese.  Sprinkle over Kale mixture.

Bake at 375 for 40 minutes till golden brown.
