Squash Blossoms

Male squash blossoms                            Bread crumbs

Mozzarella cheese                                  Parmesan cheese

Anchovies                                               Egg

Use zucchini, melon, butternut or acorn squash blossoms.  Female blossoms are all right, but that wastes the melon or squash.  Male blossoms’ stamens are plain; female blossoms’ pistils are fancy.  Remove stamens, stems and sepals .

Put a piece of mozzarella cheese and anchovy in each blossom.  Dip blossom in beaten egg and then in bread crumbs seasoned in pepper, salt and parmesan cheese.  Deep fry in oil at 350 degrees and drain on paper towels.  Serve immediately.
